Linguine Little Hollows PastaLife 3d+* V
Often fresh pasta is off the cards for vegans, but in the case of Little Hollows Pasta’s linguine, it is very much on the table. Made using only two ingredients (semolina and water) it not only totally vegan friendly, it’s utterly delicious and freshly handmade right here in Bristol.
Linguine means ‘little tongues’ in Italian, perhaps in reference to the appearance of flat strands of pasta (or maybe because it encourages tongue wagging at the table).This kind of fresh hand-rolled pasta is best suited to oily sauces, such as a good homemade basil pesto, as it provides a great canvas to display simple, delicious fresh ingredients. Linguine marries beautifully with fish-based sauces too, helping to showcase the blend of flavours, and it looks great dotted with clams or mussels. Or you could even take it back to basics and stir up a homemade tomato sauce, as is the penchant of many Italians.
