Tagliatelle is the fairy story of all pasta. It is thought to be named after the long flowing blonde hair of the beautiful woman who was to become the Duke of Ferrara’s bride in 1487. The strips of pasta were believed to be created in her honour by Italian cook, Maestro Zafirano. True or not, it’s a lovely story and one you can’t help but think of as you stir a pan of gently swirly, creamy yellow pasta.
This egg tagliatelle is fit for a Duchess, having been handmade using only the finest local ingredients, right here in Bristol. Strips of pasta have been cut about 5mm wide by pasta maker Chris of Little Hollow Pasta. In fact the Italian word tagliare means ‘to cut’. But let’s not side track from the romance. This pasta creates a deliciously comforting dish, and it’s rough and porous surface means it holds the likes of a meat ragu, seafood and vegetable sauces incredibly well. This is date night food, and a dish you’ll almost certainly want to pair with a good bottle of wine
