A variety of maize, the sweetness in sweetcorn comes from the naturally high sugar content found within the small yellow kernels surrounding the hard central core of the plant. Also referred to as corn on the cob, it can either be cooked and eaten, slathered in butter or the kernels stripped to be used in fresh salads or crispy fritters.
