White Asparagus Wye Valley Produce



White asparagus are produced by depriving asparagus from light in a process called etiolation. In order to do that, the emerging stalk is covered with soil. The stalks are not green because the plant cannot produce chlorophyll without light. With a milder flavour than green asparagus, white asparagus are an unusual delight that can be added to many recipes.
