This is a soft, mould-ripened, "lactic" sheep milk cheese, made using a geotricum mould, which gives it a charicteristic wrinkly skin. It is a light, delicately flavoured cheese, usually eaten from about 10 days old, but can be left to mature for up to a month to add strength to the flavour.
